Chai-Spiced Snowball Cookies (Russian Tea Cakes)

Cardamom is the star here, lending the chai spices their familiar flair, but it is not the only spice in this recipe. 

Instead of traditional butter and sugar, this recipe uses Medjool dates, the large, sweet dates used to make almond butter, almond milk, and almond flour, as well as almond oil. These cookies are made entirely of almonds and are light and crumbly, but with a bit of sky in the form of peanut butter balls dipped in chocolate. Take the classic chocolate peanut butter Buckeyes and add a healthy twist: Instead of chocolate chips and peanut butter cupcakes, these chocolate-dipped peanut butter balls – will take you in small directions. 

Healthy Peanut Butter Buckeyes

These peanut butter cups are one of my favorite recipes for the Christmas season and a great example of how to make the perfect homemade peanut butter cup. Basically, you take tempered chocolate and let it harden in a mini muffin tin filled with peanut butter, adding a little almond milk, a pinch of salt, and some almond flour, then a touch of cinnamon. 

The filling has a little maple syrup and a hint of icing sugar, and to increase the complexity I added some allspice and vanilla extract. 

Cherry Quinoa Chocolate Bark

This simple vegan dessert recipe couldn’t be more delicious and tastes just as good in any peanut butter cup you find. Millionaire pecan butter bars behave like caramelized pecans in chocolate, but with a hint of nutmeg and a hint of cinnamon. 

Here, the shortcrust pastry layer is simply made of flour, coconut oil, and maple syrup. Nutrient – caramelized a little maple syrup, and instead of a caramel layer, caramelized pecans are used. 

I love how the addition of quinoa gives the chocolate shell a little crunch, and it’s as natural as it comes with dried sour cherries. This is a crowd-pleaser and a delicious dessert and is one of the best healthy Christmas cookies.
